Emily Buehler is a writer based in Hillsborough, North Carolina. She received her Ph.D. in chemistry from the University of North Carolina at Chapel Hill in 2001. She worked for years as a professional baker, and is the author of Bread Science: The Chemistry and Craft of Making Bread (Two Blue Books, 2006). In 2001 she was an intern with the Office On Public Understanding of Science through the National Academies' Christine Mirzayan Science and Technology Policy Graduate Fellowship Program in Washington, D.C. She teaches classes and workshops on baking at locations including the John C. Campbell Folk School in Brasstown, North Carolina.
